Cook once, eat all week.

As we get ready for a new week, I want to chat about meal prepping. A lot of people get scared by that idea because it sounds like a lot of work. However, it can be very simple. One thing I like to do is find things that I can cook once and eat all week on, without getting bored. There are a lot of dishes and meals that you can make with the same basic ingredient. Whether it is a veggie or protein, you can cook the same thing and use it in a variety of ways all week while keeping you and your family happy. I am sharing some ideas below!

These are just a few things you can make in bulk and use all week in different ways. I also love roasting a lot of different veggies and having them to toss in with eggs, on top of a salad or to simply eat with a protein. For the sweet potato, bake a few whole, slice one and dice one to have a variety of ways to use them! For the protein, cook it without sauce or seasoning and then once done add the various flavors based on what you plan to cook. Set some aside and toss in taco seasoning or salsa, keep some plain, etc. 

I always remind my clients to KIS (keep it simple). We juggle a lot of things as moms and do not have to get fancy to get healthy. Between my Eat to Evolve meals and cooking a few things in batch each week, I am able to stay on track and not spend hours in the kitchen.
